Peanut-Banana Ice cream

I am not a raw banana fan. “Raw?” you might ask. Well I love cooked bananas, but that is a post for another time.

We had loads of frozen bananas so I decided to make some ice cream with them and it turned out great.

Recipe
5 frozen bananas
Pinch of pink himalayan salt
1 tbsp vanilla essence
*1 tbsp sweetener (optional)
1 tbsp peanut butter

*You can use mapel syrup, unrefuned sugar, soaked dates (gives a nice texture but has a distinct flavour)

Method
Add everything except the peanut butter to a bowl. Using a stick blender (or add them to a high powered blender) blend until smooth. If it is too soft, add more frozen bananas until it reaches the desired firmness. Add peanut butter and mix well using a fork.

NOTES:
You can use any nut butter in place of the peanut butter.

Adding chunky butters gives a nice texture.

If your bananas are very ripe, the flavour will be very strong. Adjust the peanut butter to suit your preference.
