Spearmint Popsicles

It is hot and the children love mint tea.

What better way to beat the heat and give them their mint tea than by making Popsicles.

Ingredients:

a handful of fresh mint leaves (we have some spare mint growing)

honey or other sweetener of choice.

Method:

Boil mint leave for about 5 minutes in order to extract as much flavour as possible.

Blend and strain leaves using cheese cloth or a very fine sieve.

Sweeten to taste.

Freeze in Popsicle molds.

 

To unfold run them under warm water for a few seconds and twist and remove.

 

Strawberry, Watermelon Ice

Summer is here and the children need a nice, easy and cool snack. This is one of our favorites thst the children love us to make

Indgredients:
4 frozen strawberries
1 cup watermelon, cubed and frozen
1/2 tsp lemon juice
1 cup ice

Method:
Blend all ingredients until smooth.

*If your blender is not he hig powered kind, you will need to add a little liquid to get it going. Add 100% orange juice and omit the lemon juice.

Carrot Punch and appologies

I took a long break from blogging. It’s now over and I have a carrot punch to celebrate.

Ingredients:

1 cup fresh coconut milk

2 carrots

dash of cinnamon

i tbsp raw honey or maple syrup

1 cup ice

Method:

Steam carrots until barely tender. Add to blender with coconut milk, cinnamon and honey (I added my carrots hot so I kept the lid opened to release the steam). Blend until smooth. Add ice and process again.
