Peanut Butter and Mapel Pistacio Granola

This recipe is inspired by a delicious granola recipe from An Unrefined Vegan

The coconut bacon is delicious, but having the ingredients to make it is not always possible; like the liquid smoke. Anyways, I made something that I can make a lot with the ingredients I have readily available at home.

Ingredients:

1/3 cup maple syrup or brown sugar
1/4 cup coconut oil or olive oil
2 heaping tbsp natural peanut butter
1/2 cup rolled oats
1/2 cups salted pistachios, chopped
1 cup coconut bacon (optional)

Method:

Mix oats, pistachios and coconut bacon (if using) together in a bowl.  In a frying pan on medium heat, add oil, peanut butter and maple syrup and stir until  completely dissolved.

Pour peanut butter over oats and mix to completely combine.

Bake for 10 minutes on a lined baking tray. Toss and then bake for 15 minutes more, depending on how crispy you want it.

  1. Annie’s recipe looks good, but so does yours!! And like you, I don’t have some of her ingredients around, so yours would be easier. I also love the pistachios in yours! Thanks for this! Celeste “The Honking Vegan” – honk, honk!
