This recipe is adapted from PETA
2 heaping tbsp peanut butter
1 clove garlic, minced
2 stalks chives
1/2 onion, diced
1 tbsp grape seed oil
1/2 red sweet pepper
2 Tbsp. sesame oil
1 tsp. cayenne pepper (optional)
2 boxes Fettuccini (i use this one)
4 Tbsp. toasted sesame seeds
4 tbsp water
salt to taste
Cook Fettuccini according to directions on box. Cool and drain.
In a frying pan, saute onions, chives and garlic until the onion becomes translucent. Reduce heat and add the peanut butter, sesame oil and water and mix until smooth.
Place the linguine in a large bowl, add the peanut sauce, and toss to coat. Garnish with the toasted sesame seeds.
