Vanilla Crepes

Ingredients:

1/2 cup gluten free oats

1/4 cup sorghum flour

1/2 cup garbanzo flour

1/2 cup cassava flour

1 tsp cinnamon

1 1/4 cup vanilla almond milk

1/2 tsp vanilla extract

2 flax eggs

1 tbsp oil

Pinch of sea salt

 

Method:

Make flax eggs by mixing 6 tablespoon water with 3 tablespoons flax meal and let “eggs” sit on counter until ready.

Mix all the dry ingredients together in a bowl. Add the wet ingredients and mix well. Preheat a pan and pour oil to coat the bottom of the pan. Pour enough batter in to coat the bottom of the frying pan and cook on low heat, until the top begins to appear dry. Carefully turn and cook the other side for about 1 minute longer.
