Herbed Potato Hash Browns

Ingredients:

6 medium potatoes, peel and diced

1 tsp each: oregano, marjoram, turmeric,

1 clove garlic, dices

2 chives, diced

1/4 onion, diced

grape seed oil

cayenne to taste

salt to taste

Method:

Season potato with marjoram, oregano, turmeric , salt and pepper. Add enough oil to a frying pan to create a very thin layer of oil. Reduce heat to a very low flame. Add potatoes to pan. On top of potatoes place chives, garlic and onion. Cover and go about your morning chores. (Oops. Sorry I’m not talking about what I do). let cook until potatoes are soft. Flip and cook for a few more seconds So that the top layer can get crispy.
