2 cups cooked garbanzos
1 cup gluten free quick oats
1 cups cassava flour
1/2 cup oil
1 cup sugar
1 tsp cinnamon, spice,
1/2 tsp nutmeg
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp salt
2 tbsp coco powder.
Mix flours, salt and baking powder together in a bowl. Blend garbanzos. Add spices and sugar and process until creamy. Add olive oil and vanilla extract and Process. Pour mixture in bowl with flours and mix until combined.
Spoon half the batter into another bowl. In this bowl, add the cocoa powder and 1/4 tsp nutmeg. Pour batter in greased baking trashy along with other batter. swirl and bake in a prepared over at 359 for 25 minutes or until an inserted comes our dry.
4 frozen strawberries
1 cup frozen mango
1/4 cup 100% white grape juice. I used white grape because this is all I had in the fridge.
let me first say that I have a cheap blender but it works for me. So I have to add liquid in order for the blender to work.
Place frozen fruit in blender. Add half of the liquid and blend. slowly add remaining liquid while blending. You might have to stop and give the mixture a stir to dislodge any pieces of fruit before continuing to blend.
Blend until smooth.

I recently stumbled across this recipe for cauliflower pizza crust. I never heard of it before and was so excited to try it.I planned to try it and even put it in my meal plan 2 weeks ago.
I read the warnings people gave about making sure that all the water was squeezed out…But, it looked like it was good with a little moisture. Plus my finger was still hurting so sueezing out the water was not much of an option as I was not going to do anything to cause my finger to hurt any worse that it did. DEFINITELY NOT!
So I made this recipe inspired by this recipe
I large cauliflower head
1/4 cup cassava flour
1/2 cup garbanzo flour
1 tbsp.dried oregano
1tsp dried marjoram
Salt to taste
3 flax “eggs” (1 egg = 1 Tbsp. flaxseed meal and 3 Tbsp. water, so 3 Tbsp. flaxseed meal and 9 Tbsp. water)
Cook cauliflower. Drain and mince until cauliflower resembles “rice”. Pour cauliflower “rice” in cheese cloth and squeeze out all the liquid. Mix flax eggs and let sit for about 2 minutes to gel up. Put cauliflower “rice” in a bowl and add the remaining ingredients.
Place cauliflower dough on a greased pizza pan and shape. Bake for about 20-30 minutes until the crust is golden brown.
Remove from oven and top with ingredients of choice.
Last week I was under a lot of stress and could not get the meal plan organized in time. But this week we’re on schedule.
Breakfast: Steel cut oats topped with fresh fruit and nuts
Lunch: Carrot rice and creamy potato curry
Supper: Baked sweet potato falafels
4 frozen strawberries
1/4 cup fresh pineapple chunks
1/4 cup 100% pineapple juice
1/2 cup pumpkin purée
sweetener of choice (optional)
Add all ingredients to blender and process. Depending on how sweet the fruit is, you might need to add a sweetener.
