I am working on a monthly meal plan right now. Gathering all of the recipes is a lot of work. But boy did I find some good recipes. I’m trying out a few right now and making my changes to fit in my budget and our dietary restrictions (gluten, soy, corn free and vegan) and it is really challenging and exciting.
Right now I am gathering my menu master list and then going to be pulling the recipes together to plan the menu.
So excited to do this.
Look out for the Meal Plan, hopefully for the month of September (fingers and toes crossed). If not in time for September so we can get the grocery lists all sorted out, it will definitely be for October.
My son blended this smoothie for us yesterday morning
1 cup Passion fruit juice (I used Ceres)
1 ripe banana
5 frozen strawberries
1/2 cup watermelon
Toss all ingredients into a blender and process.
You can also freeze all the ingredients except the juice

This was supper yesterday. I made these and put them on the table And left to do something really quick. When I came back the children had eaten all. I guess they liked them!
1/2 cup gluten free oats
1/2 cup garbanzo flour
1/2 cup cassava flour
1 tsp cinnamon
1/2 cup honey or maple syrup
1/4 cup water and more depending on how thin you want your pancakes
1 tbsp oil
Pinch of sea salt
3 Granny Smith apples or any other apple would do to be honest.
Peel, core and slice the apples and place them in a saucepan with just enough water to cover them. Cook apples on low heat until all of the water has evaporated.
Mix all the dry ingredients together in a bowl. Add the honey and oil and mix. Add water and mix well. Let mixture sit for about half a minute for the oats to soak up the liquid. Add more water depending on how thick you want you pancakes. I only added a little more water to mine.
Fry pancakes as usual.
1 cup cooked brown rice
1 cup cooked lentils
1 tsp turmeric powder
1 clove garlic, finely chopped
1 sprig thyme
1/4 green sweet pepper,
1 chive, diced
salt to taste.
oil for sautéing. I used grape seed oil
Heat a frying pan and add about a tbsp of oil. Add turmeric powder, chives, thyme and garlic and cook until turmeric turn brown. Add lentils and salta s stir until lentils begin to gets crispy. Add rice and stir fry for about a 1/2 minute or so. You can add more oil to the pan if necessary.
I served it as is, but I am thinking a sweet and sour sauce might be nice with it too.
