I made this shake about 3 weeks back and I was supposed to post the recipe before we begun Task 6 of the 30 Day Health Challenge.
Teething baby, lack of sleep, dealing with 2 children= no time to post it.
Well here it finally is and I know you will enjoy it!
3 cups coconut milk (I made it from scratch, but you can but if it you don’t have access to coconuts)
1 cup dates (about 15 or so. To be honest I just tossed in a handful)
2 tbsp sunflower butter
1 tbsp flax seed meal
1 cup cassava flour
Cook coconut milk, dates and cassava flour on a medium heat until the mixture begins to thicken (about 20 minutes). Let cool and blend. Add flax meal and sunflower butter and continue to blend.
Chill mixture and serve cold.
Or you can do like me and freeze mixture in an ice tray and then pop them into the blender to make a nice cold shake. If that is too much work for you, you could also just pop out a few cube when you feel the urge. Either way, this shake is delicious!
