Sugar-free Vanilla Cake

Tomorrow is the start of Task 6- do not add sugar to anything you are cooking.

I promised to tweak this recipe and I finally did it.


3 cups brown rice flour

1/4 cup cassava flour

2 tsp gluten free baking powder

1/2 tsp salt

1 tsp pure vanilla extract

15 dates soaked in 1/4 cup hot water

2 ripe bananas

1 pear ( I used Bartlett pear)

1 red apple (I used golden delicious)

3/4 cup water

1 cup grape seed oil


Peel and cook pear and apple in water until fruits become soft and begin to caramelize. remove from heat and blend with bananas and dates. Mix flours, baking powder and salt together.

Add oil and vanilla extract. Pour into the bowl with the flours and mix. add water and mix thoroughly.

Pour batter into a greased 9 inch round baking pan and bake for 35 minutes at 350 degrees or until skewer comes out clean.
