Lentil Patties (Gluten Free)

I like to make these patties to eat at breakfast and lunch all the time.

Ingredients:

1 cup cooked lentils (with a little water still in the peas)

3 cloves garlic finely diced

1 tsp onion finely diced

1 tbsp tomato paste

1 tsp dried oregano

½ tsp turmeric powder

½ tsp chives finely diced

1 tsp sea salt or salt to taste

¼ cup garbanzo flour

¼ cup split pea flour

Oil for frying

Directions:

In a large bowl (I just use the saucepan I cooked the lentils in) mix the lentils, garlic, onion, tomato paste oregano, turmeric powder and chives together. Add salt to taste.

Add garbanzo and split pea flour and mix well. The batter should be soft but able to be molded. I the batter is too firm add 1 tbsp water at a time until it reaches the desired texture.

Using a spoon, form mixture into small balls and then flatten with hands into a disc shape. Shallow fry in hot oil until golden brown.

Depending on size of spoon used yields 12 patties.

These patties are just served with some rice pasta sauted with some cabbage and onion. Sorry the picture is not the best.
