Cassava and Almond Butter Pancakes (Gluten, Corn, Soy Free, Vegan)

Ingredients:

½ cup cassava flour

½ cup brown rice flour

2 tbsp brown sugar

1 tbsp flax seed meal

2 tbsp almond butter

2 tbsp oil (grape seed)

water

Directions:

Mix dry ingredients together. Add almond butter and oil and stir until incorporated well.  Add water and mix until pancake batter reaches desired consistency. (I added about ½ cup water for this recipe).

Fry pancakes until the begin to turn brown.

Yields 12 pancakes.
