Vegetable Pie with Red Sauce


3 large English potatoes

1 head of broccoli

¼ cup chopped carrots

¼ cup chopped purple cabbage

¼ cup chopped white cabbage


Red sauce:

2 clove garlic

½ red onion

½ white onion

½ sweet pepper

1 tsp tummeric

1 tbsp marjoram

1 tbsp salt

2 tbsp tomato paste

1 cup almond milk (silk pure almond vanilla)

½ cup coconut milk (homemade and sweetened)

2 tbsp oil


Peel and dice potatoes. Cook cabbage, carrots and potato until tender. Remove from heat and drain.

For red sauce:

Dice onions, garlic and pepper. In a frying pan, sauté onions, garlic and pepper in the oil. Add turmeric to the pan directly into oil and let it brown before stirring. Add milk, tomato paste, marjoram and salt and stir.

Remove from heat and pour into saucepan with cooked vegetable. Add broccoli and stir.
