Cassava, Garbanzo Bread

Ingredients:

½ cup garbanzo flour

½ cup amaranth flour

1 cup rice flour

1 ½ cup cassava flour

1 tsp salt

1 ½ cup water

1 pack instant yeast

 Method:

Prepare a loaf pan. Set oven to 350 degrees.

Mix all the dry ingredients together in a bowl. Make a well in the centre of the flour and add the water. Mix thoroughly. Dough should be moist and soft, not wet. If dough is too dry add a little water at a time until it reaches desired consistency.

Bake until sides look golden brown.

Unfortunately the amaranth flavour was a little too much for me so I decided to modify the recipe by adding 2 cups cassava flour and ¼ cup of amaranth. Pictures will come as soon as I make this recipe with the modifications.

Not wanting to waste a perfectly healthy bread, I decided to make Bread Pudding.
